Tony prepared a Mexican inspired dinner last night that was rich, flavorful and had wonderful mouth feel. The warm soft tacos were moist and filled with beef, pork, diced red peppers and mild diced green chilies. He reduced a combination of Mexican Blanca, Monterrey Jack and Cheddar cheese for the sauce that was smooth, rich and decadently flavorful. Tonight we enjoyed the left over beef and cheese in a shredded lettuce salad. We are living high on the dining hog here in Juno De Mexico!
